Apple pie recipe  :

"Recently, I redid this apple pie with my mother. I had forgotten the sweet scent of hot caramel, vanilla and sweet potatoes. Despite the distance that separates us, we vowed not to wait another five years before returning to this wonderful day with laughter! "Caroline Dubé

Ingredients :

     Pastry
     2 2/3 cup (660 ml) flour
     1 c. to tab (15 mL) sugar
     1/2 c. tsp (2 mL) salt
     1/2 cup (125 mL) unsalted butter, cold
     1/2 cup (125 ml) cold shortening
     1/2 cup (125 ml) cold water

     Apple filling
     8 cooking apples, peeled and cut into 1 inch (2.5 cm). You can use apples like Cortland, Golden, Granny Smith, or a mixture of the three.
     juice of 1 lemon
     1/2 to 2/3 t (125 to 160 ml) of sugar
     1 pinch of salt
     3 c. to tab (45 mL) butter
     1 vanilla pod, cut in half and scraped
     1 cinnamon stick
     1 c. to tab (15 mL) cornstarch
     3 c. to tab (45 mL) water

     gilding
     2 eggs
     2 c. to tab (30 ml) milk
     1 pinch of salt
     2 c. to tab (30 mL) sugar

Preparation :

Preparing the dough

1. In a bowl, sift the flour , sugar and salt. Add butter and shortening and , using a pastry blender or two knives , work preparation until it has the texture of coarse crumbs . Make a well in the center of the preparation and pour water. Mix with your fingers until the dough begins to hold. Shape dough into a ball and divide into two portions. Flatten each portion into a disk and wrap in plastic wrap . Refrigerate at least 1 hour. (You can prepare the dough in advance. It will keep up to 2 days in the refrigerator up to 6 weeks in the freezer in a freezer bag . )

2 . On a lightly floured surface , roll one portion of dough into a circle 12 inches ( 30 cm) in diameter. Press onto a pie plate 10 in. (25 cm) in diameter and cut off the excess dough. Book .

Preparation of the filling

3 . Put the apples in a large bowl and sprinkle with lemon juice . Book . In a large skillet , melt the sugar and salt over high heat. Continue cooking until the mixture is amber and begins to smoke. Reduce heat to medium . Quickly add butter, mix apples reserved clove and vanilla seeds and cinnamon stick . Simmer , stirring occasionally , for 5 minutes or until apples are tender but still crisp . Remove from heat . In a colander placed over the bowl, let it drain the apple mixture . Remove the vanilla bean and cinnamon stick . Pour the liquid from the apples in the skillet and bring to boil.

4. Meanwhile, in a small bowl, dissolve cornstarch in water. Add cornstarch mixture to skillet and boil , stirring constantly with a whisk for 10 seconds or until the caramel has thickened (if necessary, add water to the lighten) . In large bowl, combine the apple mixture and caramel. Pour filling into pie reserved .

Fondant apple salted butter caramel sauce :

Ingredients for 6 people:

    6 large apples
    2 sheets of gelatin (4g)
    60 g butter dous
    120g salted butter
    220 g caster sugar
    15 cl cider
    2 tablespoons Calvados
    2 teaspoons lemon juice

Soak the gelatine leaves in a bowl of cold water.

Peel , core and cut the apples into thick slices . Cook them with melted in a large skillet , turning gently with a spatula butter. After 10 minutes sprinkle with 100g sugar and caramelize . Water then Calvados and flambé apples. When cooked apples must be melting but without much disassembly.

In a saucepan bring the cider to a simmer and remove from heat dissolve the gelatin wrung his hand. Off the heat pour this mixture over the apples and mix.

Butter 6 ramekins (for easy removal to the bottom of each ramekin a disc of greaseproof paper). Fill apple slices and juices , then tamp with the back of a spoon. Cool and chill at least 2 hours.

Prepare the caramel with the remaining sugar , 3 tablespoons water and lemon juice. When it becomes amber , stop cooking with 2 tablespoons of cold water ( to do over the sink! Beware eyes, it crackles !) Return to heat and stir while incorporating the half butter salt - plots ( or plain butter and a small teaspoon of sea salt )

To serve gently warm caramel , unmold the ramekins on plates and garnish with a drizzle of caramel sauce !

The net caramel is more refined but the caramel topping is much more greedy! See for yourself !

The advantage of this recipe is that it can be prepared in advance and if the rest of the caramel sauce is also delicious on toast or pancakes !

Caramel Apple Crisp Cheesecake :


Ingredients:

For the cheesecake:
2 cup graham cracker crumbs
1/2 cup butter, melted
1/4 tsp salt
3 8 oz. cream cheese packages, softened
3 eggs
3/4 cup sugar
1/4 cup sour cream
1 tsp. vanilla

For the apple layer:
5 cups peeled and sliced apples
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1 tbs of corn starch

For the topping:
1/2 cup all purpose flour
1/4 cup rolled oats
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
2/3 cup brown sugar
1/4 cup softened butter
12 caramels
1 tbs cream
1/4 cup walnuts


Directions:

Preheat oven to 350.

In a mixing bowl combine graham cracker crumbs, melted butter and 1/4 tsp salt together with a fork. Press inside the bottom of a 9 or 10 inch springform pan. Bake for 5 minutes. Remove from oven to cool.

Meanwhile in the bowl of your electric mixer cream cream cheese and sugar together until light and fluffy. Add in eggs one at a time. Mix in sour cream and vanilla.

Pour into springform pan. Set aside.

To start your apple layer, in a large bowl combine apples, brown sugar, spices and corn starch. Carefully layer on top of cheesecake.

To make your topping mix all of your ingredients (except caramels and walnuts) when mixture is resembles course crumbs sprinkle on top of the apple layer.

Bake for 1 hour. Turn oven off. Sprinkle  cheesecake with walnuts, close the oven door and let sit for an additional hour.

Refrigerate for 4-6 hours (or overnight) Just before serving; melt caramels and cream together over low heat stirring constantly. Drizzle over cheesecake slices before serving.

"Healthy" brownies with hazelnuts :

 



Ingredients (6 persons):


- 180 g of hazelnut purée - 5 tablespoons agave syrup - 200g dark chocolate - 100 g flour spelled
small semi-complete - 1/2 teaspoon bicarbonate - 3 eggs - 50 g walnuts coarsely chopped pecans.

preparation:

Mix mashed hazelnuts and agave syrup. Add the melted chocolate in a bain marie, then the flour and baking soda. Then add the eggs one by one. Finish with pecans.

Put the dough in a square pan about 20 cm.

Preheat oven to 180 degrees and bake 15-20 minutes. Cool and cut into squares.

I think the result is very good. Obviously less rich than traditional brownies, cakes are a delicious nutty flavor that appealed to me.
